| We are a group of barbecue enthusiasts who believe in making the best, natural, and unadulterated foods that we can. We participate in BBQ competitions, event catering, and everyday firing up of the grill for vittles at the homestead. We have a similar and collective philosophy. As we say No tricks, no shortcuts, no excuses. |

| 2. Why are we here? |

| We have seen so many alleged barbecue sites and books that have forced their respective opinions on the reader recipes, BBQ sauces, etc. None of this explains why the person making the food is doing any of this. We want to present the raw physics and rational behind the whole process so the reader can make his or her own informed decisions and DO IT RIGHT! |

| 3. What do we have to gain from this? |

| We gain the satisfaction of sharing otherwise arcane information with you; the potential barbecue master. Hey just like anyone else, we want our website to be popular. Maybe even sell you a hat or T-shirt along the way to help pay for this operation. You know, show the world that you support the pure method of BBQ as it was meant to be. But the most important factor of all; ensuring that you actually know what you?re doing behind the grill. |

| 4. Are we available for hire? |
|

| We do cater events, but it usually is a rather expensive proposition. The logistical issues are enormous. We have to arrange transportation for the grill(s) or locate for rental units, track down a local butcher offering the finest quality meats, obtain lodging and local transportation, and so on. | 5. How do we know what we know? |

| Without question, we have learned from wood shedding pure and simple. In fact, that?s why we exist on the Web. There isn?t a single site out there that will throw away its respective conjecture and opinion. Everyone is trying to offer you a magic recipe or ?BBQ? sauce. That?s not the way to learn and do it properly. You would never even consider going into a real barbecue competition without a solid understanding of what you?re doing and why you?re doing it. |

| We have studied, researched, and observed all conceivable aspects of the grilling process. We have studied the physics and thermodynamics controlling how different grills operate. As a matter of fact, we are still learning. A day without learning something is a day wasted. |

| We have experimented with making food outdoors in just about every reasonable (and sometimes extreme) season or weather condition. We?ll explain to you why, for this reason, there is no such thing as a ?set? cooking time for any food. |
